Coffee Cake

    Preheat the Oven

    Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking pan.

    Mix Dry Ingredients

    In a large bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and cinnamon.

    Cream Butter and Sugar

    In another bowl, cream the butter until smooth. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.

    Combine the Mixtures

    Gradually add the dry ingredients to the wet mixture, alternating with the buttermilk, starting and ending with the dry ingredients. Mix until just combined.

    Pour into Pan

    Pour half of the batter into the prepared pan and spread it evenly.

Roasted Apples

    Prepare the Apples

    Core and slice the apples into thin wedges.

    Roast the Apples

    In a skillet over medium heat, melt the butter. Add the apple wedges, brown sugar, and cinnamon. Cook for about 5-7 minutes, until the apples are tender and caramelized. Set aside.

Candied Walnuts

    Prepare the Walnuts

    In a saucepan, combine the walnuts, sugar, and water over medium heat.

    Candy the Walnuts

    Cook while stirring until the sugar dissolves and the mixture thickens. Continue cooking until the walnuts are coated and the sugar has caramelized. Spread on parchment paper to cool.

Whipped Cream

    Whip the Cream

    In a mixing bowl, beat the heavy cream, powdered sugar, and vanilla extract until soft peaks form.

Caramel Sauce

    Make the Caramel

    In a saucepan over medium heat, combine the sugar and cook until it melts and turns golden brown. Remove from heat and carefully stir in the butter until melted, then slowly whisk in the heavy cream until smooth.

Assemble

    Layer the Cake

    Spread the roasted apples over the batter in the pan. Pour the remaining batter on top and smooth it out.

    Bake the Cake

    Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.

    Once cooled, slice the coffee cake and serve with whipped cream, candied walnuts, and drizzle with caramel sauce.
