    In a skillet over medium heat, add the chorizo sausage. Cook for about 5-7 minutes, breaking it apart with a spatula until it is browned and fully cooked.

    In a bowl, whisk the eggs until well beaten. Once the chorizo is cooked, lower the heat and pour the eggs into the skillet. Stir gently until the eggs are cooked through, about 3-4 minutes.

    Sprinkle the pepper jack cheese over the eggs and chorizo mixture. Cover the skillet with a lid and let it sit for 1-2 minutes until the cheese melts.

    In a mixing bowl, combine the diced tomatoes, onion, garlic, jalapeño, cilantro, lime juice, salt, and black pepper. Stir until well mixed. Set aside to let the flavors meld.
