Cook the Chorizo
In a skillet over medium heat, add the chorizo sausage. Cook for about 5-7 minutes, breaking it apart with a spatula until it is browned and fully cooked.

Prepare the Salsa
In a mixing bowl, combine the diced tomatoes, onion, garlic, jalapeño, cilantro, lime juice, salt, and black pepper. Stir until well mixed. Set aside to let the flavors meld.

Cook the Potatoes
In a large skillet, heat the olive oil over medium heat. Add the diced potatoes and cook for about 10 minutes, stirring occasionally until they start to soften.
