For the Chicken Torta

Method

Prepare the Jalapeno-Cilantro Aioli

    Make the Aioli

    In a mixing bowl, combine mayonnaise, chopped jalapeno, and chopped cilantro. Mix well and set aside.

Cook the Chicken

    Season the Chicken

    Rub the chicken breasts with olive oil, salt, and black pepper.

    Cook the Chicken

    Heat a grill or skillet over medium heat. Cook the seasoned chicken for 6-7 minutes on each side, or until fully cooked and juices run clear.

    Melt the Cheese

    In the last minute of cooking, place a slice of pepperjack cheese on top of each chicken breast and cover the skillet or grill with a lid to melt the cheese.

Assemble the Torta

    Prepare the Vegetables

    Slice the tomato, red onion, and avocado. Set aside.

    Build the Torta

    Cut the tortilla bread or bolillo rolls in half. Spread a generous amount of the jalapeno-cilantro aioli on both sides of the bread. Layer the lettuce, cooked chicken with melted cheese, sliced tomato, sliced red onion, and sliced avocado on the bottom half of the bread. Top with the other half of the bread.

    Serve

    Cut the chicken torta in half if desired and serve immediately with extra aioli on the side.
