Method

Tortilla Preparation

    Fry Tortillas

    In a skillet, heat vegetable oil over medium-high heat. Once hot, add corn tortillas one at a time and fry until crispy and golden brown, about 2 minutes per side. Remove from oil and place on paper towels to drain excess oil.

Pulled Pork Preparation

    Prepare Pulled Pork

    In a saucepan over medium heat, mix the cooked pulled pork with the BBQ sauce until heated through, about 5-7 minutes. Stir occasionally and set aside.

Guacamole Preparation

    Make Guacamole

    In a bowl, mash the ripe avocados with a fork. Add lime juice, salt, chopped cilantro, and diced red onion. Mix until well combined and set aside.

Pickled Red Onions Preparation

    Pickle the Onions

    In a jar, combine the sliced red onions, apple cider vinegar, sugar, salt, and water. Stir until sugar dissolves. Let sit for at least 30 minutes to pickle.

Pico Jalapeno Aioli Preparation

    Make Aioli

    In a small bowl, mix the mayonnaise, diced jalapenos, lime juice, and garlic powder until smooth and well combined. Set aside.

Assembly

    Assemble Tostadas

    On each crispy tortilla, layer the pulled pork, a generous scoop of guacamole, pickled red onions, and a drizzle of pico jalapeno aioli. Top each tostada with a piece of burrata cheese and sprinkle with fresh cilantro leaves.
