    Prepare the Steak

    Season the bistro steak with salt and black pepper on both sides.

    Cook the Steak

    Heat olive oil in a skillet over medium-high heat. Once hot, add the steak and cook for 4-5 minutes on each side for medium-rare, or to your desired doneness. Remove from heat and let rest.

Hollandaise Sauce

    Prepare the Hollandaise Sauce

    In a heatproof bowl, whisk together the egg yolks and lemon juice. Place the bowl over a pot of simmering water, making sure the bowl doesn't touch the water.

    Whisk and Emulsify

    Slowly drizzle in the melted butter while whisking continuously until the sauce thickens. Season with salt and cayenne pepper, and keep warm.

Eggs

    Cook the Eggs

    In a skillet over medium heat, melt the butter. Crack the eggs into the skillet and cook to your desired doneness (sunny-side up, over-easy, etc.). Season with salt.

Home Fries

    Prepare the Potatoes

    Dice the potatoes and onion into small cubes.

    Cook the Home Fries

    In a large skillet, heat olive oil over medium heat. Add the diced potatoes and onion, season with salt and black pepper, and cook for about 15-20 minutes, stirring occasionally, until golden brown and crispy.

Toast

    Toast the Bread

    Toast the slices of bread to your liking. Spread with butter before serving.
