Preparing the BBQ Beef

Cook the Beef
Preheat your smoker or grill to 225°F (107°C). Season the beef brisket generously with salt and pepper. Place the brisket in the smoker and cook for approximately 1.5 hours per pound or until it reaches an internal temperature of 195°F (90°C), wrapping it in foil after 4 hours of cooking.

Prepare the Smoked Gouda
Grate or slice the smoked gouda cheese to your preference for topping the BBQ beef.

Chop the Green Onions
Wash and chop the green onions. Set aside for garnish.
Making the Jalapeno Aioli

Combine Ingredients
In a mixing bowl, combine the mayonnaise, diced jalapenos, minced garlic, and lemon juice. Mix until well combined.

Season the Aioli
Add salt and pepper to taste, mixing again to ensure even seasoning. Adjust the heat by adding more jalapeno if desired.
Serving the BBQ Beef

Assemble the Dish
Once the brisket is cooked, let it rest for 30 minutes before slicing. Layer the slices of brisket on a plate, top with crispy bacon, and sprinkle grated smoked gouda over the top.

Garnish with chopped green onions and serve with jalapeno aioli on the side for drizzling or dipping.
