Method

Dough Preparation

  1. 1

    Activate the Yeast

In a small bowl, combine warm water (1.5 cups) with sugar (1 tbs) and active dry yeast (1 tbs). Allow it to sit for about 5-10 minutes until it becomes frothy.

  2. 2

    Mix the Dough

In a large mixing bowl, combine all-purpose flour (4 cups) and salt (1 tsp). Make a well in the center and pour in the activated yeast mixture and melted unsalted butter (0.25 cups). Stir until the dough begins to come together.

  3. 3

    Knead the Dough

Turn the dough out onto a floured surface and knead for about 8-10 minutes until smooth and elastic. Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

Shaping and Boiling

  1. 4

    Shape the Pretzels

Once the dough has risen, punch it down and divide it into 8 equal pieces. Roll each piece into a long rope and shape it into a pretzel. Place the shaped pretzels on a parchment-lined baking sheet.

  2. 5

    Prepare the Baking Soda Solution

In a large pot, bring 10 cups of water to a boil. Once boiling, slowly add 0.5 cups of baking soda, stirring to dissolve.

  3. 6

    Boil the Pretzels

Gently drop each pretzel into the boiling baking soda solution for about 30 seconds. Use a slotted spoon to remove them and place them back on the baking sheet.

Baking

  1. 7

    Bake the Pretzels

Preheat your oven to 450°F (230°C). Brush each pretzel with melted butter (4 tbs) and sprinkle with coarse sea salt (2 tbs). Bake for 12-15 minutes until golden brown.

  2. 8

    Cool and Serve

Remove the pretzels from the oven and let them cool on a wire rack. Serve warm with your favorite dipping sauce.
