In a small bowl, combine warm water (1.5 cups) with sugar (1 tbs) and active dry yeast (1 tbs). Allow it to sit for about 5-10 minutes until it becomes frothy.

In a large mixing bowl, combine all-purpose flour (4 cups) and salt (1 tsp). Make a well in the center and pour in the activated yeast mixture and melted unsalted butter (0.25 cups). Stir until the dough begins to come together.

Turn the dough out onto a floured surface and knead for about 8-10 minutes until smooth and elastic. Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

Shape the Pretzels
Once the dough has risen, punch it down and divide it into 8 equal pieces. Roll each piece into a long rope and shape it into a pretzel. Place the shaped pretzels on a parchment-lined baking sheet.

In a large pot, bring 10 cups of water to a boil. Once boiling, slowly add 0.5 cups of baking soda, stirring to dissolve.
