    Mix the dry ingredients

    In a large bowl, whisk together the all-purpose flour, baking powder, sugar, and salt until well combined.

    Combine wet ingredients

    In another bowl, whisk together the milk, egg, melted butter, and vanilla extract until smooth.

    Combine wet and dry ingredients

    Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; it’s okay if there are a few lumps.

    Cook the pancakes

    Heat a non-stick skillet or griddle over medium heat and lightly grease with cooking spray or butter. Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes. Flip and cook the other side until golden brown, another 2-3 minutes. Repeat with remaining batter.

Bananas Foster Sauce Preparation

    Cook the bananas

    In a skillet, melt 2 tablespoons of butter over medium heat. Add the sliced ripe bananas and cook for 1-2 minutes until they begin to soften.

    Add the sugar and cinnamon

    Sprinkle the brown sugar and cinnamon over the bananas. Stir gently to coat the bananas evenly and cook for another 1-2 minutes until the sugar has melted and becomes syrupy.

    Add the rum

    Carefully add the dark rum to the skillet. Allow it to simmer for about 1-2 minutes, then use a long lighter or match to ignite the rum (optional). Let it flame for a few seconds, then extinguish. Stir to combine.

    Finish the sauce

    Remove from heat and stir in the vanilla extract. The sauce will be warm and syrupy.
