Prepare the Broth

    Sauté Aromatics

    In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Add the minced garlic and sauté for an additional minute until fragrant.

    Add Tomato Base

    Stir in the tomato paste and cook for 2 minutes, then add the canned diced tomatoes, beef broth, soy sauce, Worcestershire sauce, bay leaves, salt, black pepper, cayenne pepper, and thyme. Bring to a simmer.

    Simmer the Broth

    Reduce the heat and let the broth simmer for 25 minutes, stirring occasionally. Adjust seasoning to taste.

Cook the Proteins

    Cook the Beef

    In a separate skillet, cook the cubed filet mignon over medium-high heat until browned and cooked to your desired doneness, about 5-7 minutes. Remove and set aside.

    Cook the Shrimp

    In the same skillet, add the shrimp and cook until pink and opaque, about 3-4 minutes. Remove and set aside.

    Boil the Eggs

    In a pot, bring water to a boil and gently add the eggs. Boil for 9-10 minutes for hard-cooked eggs, then transfer to an ice bath. Once cooled, peel and set aside.

Prepare the Noodles and Serve

    Cook the Noodles

    In a large pot of boiling salted water, cook the egg noodles according to package instructions until al dente. Drain and set aside.

    Assemble the Dish

    In serving bowls, divide the cooked noodles. Ladle the hot broth over the noodles, then top with the cooked beef, shrimp, halved boiled eggs, and sliced green onions.

    Serve immediately while hot, garnished with extra green onions if desired.
