Method

Crispy Calamari

1

Prepare the Calamari

Rinse the calamari rings under cold water and pat them dry with paper towels.

2

Set Up the Breading Station

In a bowl, mix together the all-purpose flour, cornstarch, salt, black pepper, and cayenne pepper. In another bowl, whisk together the eggs and milk until well combined.

3

Bread the Calamari

Dip each calamari ring into the egg mixture, letting any excess drip off, then dredge in the flour mixture, ensuring they are well coated.

4

Heat the Oil

In a large, deep skillet or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

5

Fry the Calamari

Working in small batches, fry the breaded calamari rings in the hot oil for about 2-3 minutes or until they are golden brown and crispy. Remove and drain on paper towels.

Spicy Aioli

6

Prepare the Aioli

In a small bowl, combine the mayonnaise, minced garlic, sriracha sauce, lemon juice, and salt. Mix well until smooth.

Marinara Sauce

7

Cook the Marinara Sauce

In a saucepan, heat the olive oil over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant. Stir in the crushed tomatoes, oregano, basil, salt, pepper, and sugar. Simmer for 15 minutes, stirring occasionally.
