Crust Preparation

Preheat the Oven

Preheat your oven to 325°F (160°C).

Combine Ingredients

In a medium bowl, mix together the graham cracker crumbs, sugar, and melted butter until well combined.

Form the Crust

Press the mixture firmly into the bottom of a 9-inch springform pan to form an even crust.

Bake the Crust

Bake the crust in the preheated oven for 10 minutes. Remove from the oven and allow to cool.

Filling Preparation

Beat the Cream Cheese

In a large mixing bowl, beat the softened cream cheese with an electric mixer on medium speed until smooth and creamy.

Add Sugar and Sour Cream

Gradually add the granulated sugar and sour cream to the cream cheese, mixing until well combined.

Mix in Vanilla

Add the vanilla extract and mix until fully incorporated.

Add Eggs

Add the eggs one at a time, mixing on low speed until just combined. Be careful not to overmix.

Pour Filling into Crust

Pour the cream cheese filling into the cooled graham cracker crust, smoothing the top with a spatula.

Bake the Cheesecake

Bake the cheesecake in the oven for 55-60 minutes, or until the center is set but still slightly jiggly.

Cool and Chill

Turn off the oven and leave the cheesecake inside with the door ajar for 1 hour. Remove from the oven and let cool to room temperature, then refrigerate for at least 4 hours or overnight.
