Preparation
- 1
Clean the Razor Clams
Rinse the razor clams thoroughly under cold running water to remove any sand or grit. Soak them in a bowl of water for about 30 minutes if necessary, then drain.
- 2
Prepare the Aromatics
Finely chop the garlic and ginger. Slice the red chili peppers, removing seeds if you prefer less heat. Chop green onions and cilantro for garnish.
Cooking

Sauté Aromatics
In a large skillet or wok, heat the vegetable oil over medium heat. Add the chopped garlic, ginger, and sliced red chili peppers. Sauté for about 2-3 minutes until fragrant.

Add Razor Clams
Increase the heat to high and add the cleaned razor clams to the skillet. Stir-fry for 2-3 minutes until the clams start to open.
- 5
Season the Clams
Pour in the soy sauce, fish sauce, and lime juice over the clams. Stir well to combine and cook for an additional 2-3 minutes until all clams are fully opened and cooked through.
