Prepare the Marinade
In a small bowl, mix together olive oil, minced garlic, chopped fresh rosemary, lemon juice, salt, and black pepper until well combined.

Marinate the Quails
Place the quails in a shallow dish or a resealable plastic bag. Pour the marinade over the quails, ensuring they are well coated. Cover and refrigerate for at least 1 hour, or overnight for more flavor.
Roasting

Preheat the Oven
Preheat your oven to 400°F (200°C).

Prepare for Roasting
Remove the quails from the marinade and place them on a roasting pan. Discard leftover marinade.

Roast the Quails
Roast the quails in the preheated oven for about 25-30 minutes or until the internal temperature reaches 165°F (75°C) and the skin is crispy.

Rest the Quails
Once roasted, remove the quails from the oven and let them rest for 5 minutes before serving.

Garnish the roasted quails with fresh parsley and serve with lemon wedges on the side.
