    Clean the Crab

    Fill a large pot with water and bring it to a boil. Once boiling, add the live crabs carefully, ensuring they are fully submerged. Boil for about 5 minutes. Remove the crabs from the pot and allow them to cool slightly. Once cool enough to handle, clean the crabs by removing the gills, the stomach sac, and any other inedible parts.

    Prepare the Marinade

    In a bowl, combine the olive oil, minced garlic, lemon juice, Old Bay seasoning, salt, and black pepper. Mix well to create a marinade.

    Marinate the Crab

    Place the cleaned crabs in a large dish or a resealable plastic bag. Pour the marinade over the crabs, making sure they are well coated. Allow the crabs to marinate in the refrigerator for at least 30 minutes, or up to 2 hours for more flavor.

Roasting

    Preheat the Oven

    Preheat your oven to 425°F (220°C).

    Arrange the Crabs

    Take the marinated crabs out of the refrigerator and arrange them on a large baking sheet. Make sure to spread them out evenly to ensure they roast properly.

    Roast the Crabs

    Place the baking sheet in the preheated oven and roast the crabs for about 25-30 minutes or until they are hot, fragrant, and have a slight char. Baste the crabs with the remaining marinade halfway through the cooking time for added flavor.

    Once roasted, remove the crabs from the oven. Sprinkle with chopped parsley for garnish. Serve hot with lemon wedges on the side.
