Method

Preparation

  1. 1

    Clean the Manila Clams

Rinse the Manila clams under cold running water, scrubbing the shells to remove any sand or grit. Soak them in a bowl of cold water for about 20 minutes to help expel any remaining sand. Drain and set aside.

Cooking

  1. 2

    Sauté Aromatics

In a large pot or deep skillet, heat the olive oil over medium heat. Add the minced garlic and shallots, sautéing for about 2-3 minutes until fragrant and translucent.

  2. 3

    Add Clams and Wine

Add the cleaned Manila clams to the pot, followed by the white wine. Stir gently to combine the ingredients.

  3. 4

    Cooking the Clams

Increase the heat to medium-high and cover the pot. Cook for about 5-7 minutes, or until the clams open up. Discard any clams that do not open.

  4. 5

    Add Seasoning

Once the clams are open, stir in the chopped parsley, lemon juice, lemon zest, red pepper flakes, salt, and black pepper to taste. Cook for an additional 2 minutes to combine the flavors.

Serving

  1. 6

    Serve the Dish

Ladle the clam mixture into bowls, ensuring each serving has plenty of broth. Serve hot with slices of crusty bread for dipping.
