Method

Preparation

  1. 1

    Prepare the Lobster

Bring a pot of salted water to a boil. Carefully add the lobster tails and cook for about 6-8 minutes or until they are bright red. Remove the tails from the pot and let them cool before removing the meat from the shells. Chop the lobster meat into bite-sized pieces.

  2. 2

    Chop Vegetables

Thinly slice the green onions, and dice the carrot into small cubes. These will be added to the fried rice for flavor and texture.

Cooking

  1. 3

    Scramble the Eggs

In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium heat. Crack the eggs into the skillet and scramble them until fully cooked. Remove the scrambled eggs from the skillet and set aside.

  2. 4

    Stir-Fry Vegetables

In the same skillet, add another tablespoon of vegetable oil. Add the diced carrots and sauté for about 2-3 minutes until they start to soften. Then, add the frozen peas and the sliced green onions. Stir-fry for another 2 minutes.

  3. 5

    Combine Ingredients

Add the cooked jasmine rice to the skillet and stir well to combine with the vegetables. Make sure to break up any clumps of rice.

  4. 6

    Add Sauces

Pour in the soy sauce, sesame oil, and fish sauce over the rice mixture. Stir to combine and cook for an additional 2 minutes.

  5. 7

    Incorporate Lobster and Eggs

Add the chopped lobster meat and scrambled eggs back into the skillet. Mix everything together gently, ensuring the lobster is evenly distributed. Season with salt and black pepper to taste.

  6. 8

    Final Stir-Fry

Continue to stir-fry the mixture for another 2-3 minutes to heat everything through and allow the flavors to meld. Remove from heat.
