Cook the Vermicelli
Bring a pot of water to a boil. Add the vermicelli noodles and cook according to package instructions until al dente, usually about 3-5 minutes. Drain and rinse under cold water to stop the cooking process. Set aside.

Marinate the Pork
In a bowl, combine soy sauce, fish sauce, brown sugar, minced garlic, and black pepper. Add the pork tenderloin to the marinade, ensuring it's well coated. Cover and let it marinate in the refrigerator for at least 30 minutes.

Prepare the Vegetables
While the pork is grilling, shred the lettuce, julienne the cucumber, and rinse the bean sprouts and mint leaves. Set aside.
Making the Fish Sauce Dressing

Combine Dressing Ingredients
In a small bowl, whisk together fish sauce, sugar, lime juice, water, minced garlic, and minced chili until the sugar is dissolved. Adjust seasoning to taste.

In a serving bowl, add a portion of the cooked vermicelli noodles. Top with sliced grilled pork, shredded lettuce, julienned cucumber, bean sprouts, and fresh mint leaves. Drizzle with the fish sauce dressing before serving.
