Preparing the Grilled Beef Short Ribs

Marinate the Short Ribs
In a large bowl, combine soy sauce, brown sugar, minced garlic, black pepper, and sesame oil. Mix well.

Add the beef short ribs to the marinade. Ensure they are well-coated. Cover and refrigerate for at least 2 hours, preferably overnight.

Cooking the Vermicelli and Preparing the Bowl

Cook the Vermicelli Noodles
In a pot of boiling water, add the vermicelli noodles and cook according to package instructions, usually about 3-4 minutes. Drain and rinse under cold water to stop cooking.

In a large serving bowl, layer the cooked vermicelli noodles, followed by mixed salad greens, julienned cucumber, and sliced grilled short ribs. Top with fresh mint leaves.

In a small bowl, whisk together fish sauce, water, lime juice, sugar, minced garlic, and chili flakes until the sugar is dissolved.
