Method
Preparation of Regular Fries

Cut the Potatoes
Wash and peel the russet potatoes. Cut them into thin strips, about 1/4 inch thick.

Soak the Potatoes
Soak the cut potatoes in cold water for at least 30 minutes to remove excess starch.

Heat the Oil
In a deep fryer or large pot, heat the vegetable oil to 350°F (180°C).

Fry the Potatoes
Drain the soaked potatoes and pat them dry with paper towels. Fry them in batches for 5-7 minutes or until golden brown.

Season
Remove the fries from the oil, drain on paper towels, and sprinkle with salt to taste.
Preparation of Lemon Pepper Fries

Add Seasoning
Once the regular fries are cooked and drained, toss them in a bowl with lemon zest and black pepper.
Preparation of Cajun Fries

Add Cajun Seasoning
After frying the regular fries, toss them with cajun seasoning while they are still hot.
Preparation of Garlic Fries

Prepare Garlic Oil
In a small pan, sauté minced garlic cloves in olive oil until fragrant, about 1-2 minutes.

Preparation of Sweet Potato Fries

Cut the Sweet Potatoes
Wash and peel the sweet potatoes. Cut them into thin strips, similar to regular fries.

Toss with Oil and Spices
In a bowl, combine the cut sweet potatoes with olive oil and paprika. Toss until evenly coated.

Bake the Fries
Spread the sweet potato fries on a baking sheet in a single layer. Bake in a preheated oven at 425°F (220°C) for 20-25 minutes, flipping halfway through.
