Prepare the Fish Mixture
In a food processor, add the white fish fillets and blend until they form a smooth paste.

Combine Ingredients
Transfer the fish paste to a mixing bowl. Add potato starch, egg, minced garlic, chopped green onion, salt, black pepper, and water. Mix well until all ingredients are fully combined.
Forming Fish Balls

Shape the Fish Balls
With wet hands, take small portions of the fish mixture and roll them into balls, about 3 cm in diameter. Place the formed fish balls on a tray lined with parchment paper.
Frying

Heat the Oil
In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches about 180°C (350°F).

Fry the Fish Balls
Carefully add a few fish balls into the hot oil, making sure to not overcrowd the pan. Fry for about 4-5 minutes or until they turn golden brown and float to the surface.

Drain and Serve
Remove the fried fish balls using a slotted spoon and drain them on paper towels. Serve hot with your favorite dipping sauce.
