Method
Cooking the Crab

Prepare the Pot
In a large pot, bring 4 cups of water to a boil. Add 1 tablespoon of salt to the boiling water.

Cook the Crab
Carefully add 2 whole Dungeness crabs to the boiling water. Cover the pot and let them cook for about 10-12 minutes until they turn bright orange.

Cool and Clean
Remove the crabs from the pot and let them cool for a few minutes. Once they are cool enough to handle, crack the shells and remove the meat. Set aside.
Making the Tamarind Sauce

Combine Ingredients
In a medium saucepan, combine 1 cup of tamarind paste, 1 tablespoon of brown sugar, 2 tablespoons of soy sauce, 2 tablespoons of lime juice, 2 minced garlic cloves, and 1 cup of water.

Simmer the Sauce
Bring the mixture to a simmer over medium heat, stirring occasionally. Allow it to cook for about 5-7 minutes until slightly thickened.

Add Seasoning
Stir in 1 teaspoon of chili flakes and 2 tablespoons of chopped fresh cilantro. Mix well and remove from heat.
Serving

Plate the Dish
On a serving platter, arrange the crab meat and drizzle generously with the tamarind sauce.

Garnish and Serve
Garnish with additional cilantro if desired and serve immediately.
