Method
Preparing the Crab

Boil Water
In a large pot, bring 4 liters of water to a rolling boil. Add 2 tablespoons of salt to the water.

Cook the Crab
Carefully add the whole Dungeness crabs to the boiling water. Cover the pot and cook for about 10-15 minutes, or until the crabs turn a bright orange color.

Cool the Crab
Once cooked, remove the crabs from the pot and let them cool on a plate. Once cooled, you can crack the shells for easier eating.
Making the Black Pepper Sauce

Prepare the Ingredients
Crush the black peppercorns using a mortar and pestle or a spice grinder. Mince the garlic cloves.

Finish the Sauce
Stir in 2 tablespoons of soy sauce and 2 tablespoons of lemon juice. Cook for an additional minute. Remove from heat and stir in the chopped green onions.
Serving

Plate the Crab
Place the cracked Dungeness crab on a serving platter. Drizzle the black pepper sauce over the crabs.

Garnish and Serve
Garnish with additional chopped green onions if desired. Serve immediately while hot.
