House Special Sauce
Method
Preparing the Crab

Boil the Crab
Fill a large pot with 4 cups of water and add 1 teaspoon of salt. Bring the water to a boil over high heat.

Cook the Crab
Once the water is boiling, carefully add the whole Dungeness crabs to the pot. Cover and cook for about 8-10 minutes, or until the crabs turn a bright orange color.

Making the House Special Sauce

Combine Sauce Ingredients
In a bowl, combine minced garlic, minced ginger, soy sauce, oyster sauce, chili paste, brown sugar, and sesame oil. Mix well.

Thicken the Sauce
In a small bowl, mix cornstarch with 2 tablespoons of water until smooth. Add this mixture to the sauce and stir to combine.
Sautéing the Crab

Heat the Sauce
In a large skillet or wok, pour the combined sauce. Bring it to a simmer over medium heat.

Add Crab
Once the sauce is simmering, add the cracked Dungeness crab pieces to the skillet. Stir well to coat the crab in the sauce.

Cook Together
Allow the crab to cook in the sauce for about 5-7 minutes, stirring occasionally until everything is heated through and well combined.

Garnish and Serve
Remove from heat, garnish with chopped green onions and serve hot with steamed rice or noodles.
