Method

Preparation

  1. 1

    Prepare the Vegetables

Peel and dice the potatoes, chop the onion and celery, and set aside.

  2. 2

    Open the Clams

Open the canned clams and reserve the juice. Chop the clams into bite-sized pieces.

Cooking

  1. 3

    Sauté the Vegetables

In a large pot, melt the butter over medium heat. Add the chopped onion and celery, cooking until they are soft, about 5 minutes.

  2. 4

    Add Potatoes and Clam Juice

Add the diced potatoes, reserved clam juice, and bay leaf to the pot. Stir well and bring to a simmer. Cook until the potatoes are tender, about 15 minutes.

  3. 5

    Add Clams and Cream

Once the potatoes are tender, add the chopped clams, heavy cream, and milk to the pot. Stir to combine.

  4. 6

    Season the Chowder

Add salt, black pepper, and thyme to the pot, and stir well. Allow to simmer for an additional 5 minutes to blend the flavors.

Serving

  1. 7

    Garnish and Serve

Remove the bay leaf from the chowder. Ladle the clam chowder into bowls and garnish with chopped parsley and crushed red pepper if desired. Serve hot.
