Preparing the Calamari

    Clean the Calamari

    Begin by cleaning the calamari. Rinse under cold water, remove the head, and pull out the innards. Remove the transparent quill and skin. Cut the body into rings about 1/2 inch thick.

    Marinate the Calamari

    Place the calamari rings in a bowl and pour buttermilk over them. Allow to marinate for at least 30 minutes in the refrigerator to tenderize.

    Prepare the Breading

    In a separate bowl, combine flour, cornstarch, salt, black pepper, and paprika. Mix well until all dry ingredients are evenly incorporated.

    Heat the Oil

    In a deep skillet or pot, add vegetable oil and heat it to 375°F (190°C). Use a thermometer for accuracy.

Frying the Calamari

    Coat the Calamari

    Remove the calamari from the buttermilk and allow excess to drip off. Dredge the rings in the flour mixture, ensuring they are fully coated.

    Carefully place the coated calamari rings into the hot oil, working in batches to avoid overcrowding. Fry for about 2-3 minutes, or until golden brown and crispy.

Making the Dipping Sauce

    In a small bowl, mix together mayonnaise, ketchup, lemon juice, garlic powder, and cayenne pepper until smooth and well combined.
