    Prepare the Yuca

    Peel the yuca (cassava) using a vegetable peeler, removing the tough outer skin. Cut the yuca into 1-inch thick pieces.

    Boil the Yuca

    Place the cut yuca in a large pot, cover with water, and add 1 tsp of salt. Bring to a boil and cook for about 20-25 minutes until tender. Test by piercing with a fork; it should be soft but not falling apart.

    Drain and Cool

    Drain the yuca and let it cool for a few minutes. Once cool enough to handle, cut each piece in half lengthwise to create thinner strips.

    Fry the Yuca

    In a deep skillet or pot, heat the vegetable oil over medium-high heat. Once hot, carefully add the yuca strips in batches to avoid overcrowding. Fry until golden brown and crispy, about 5-7 minutes. Remove and drain on paper towels. Sprinkle with salt.

Salsa Verde

    Combine Ingredients

    In a mixing bowl, combine the chopped cilantro, green onions, jalapeño, minced garlic, lime juice, olive oil, and salt.

    Mix the Salsa

    Using a fork or a whisk, mix all the ingredients together until well combined. Taste and adjust seasoning if necessary.

    Serve

    Transfer the salsa verde to a serving bowl. It’s best served fresh alongside the crispy yuca fries.
