Preparation

1. Prepare the Ingredients

Ensure that all ingredients are prepped before starting the cooking process. Dice the carrots, chop the green onions, and mince the garlic and ginger. If using frozen peas, you can leave them at room temperature to thaw.

2. Cook the Eggs

In a large skillet or wok, heat 1 tablespoon of sesame oil over medium heat. Whisk the eggs in a bowl and pour them into the skillet. Cook, stirring frequently, until they are scrambled and fully cooked. Remove them from the skillet and set aside.

Cooking

3. Stir-Fry the Vegetables

In the same skillet or wok, add the remaining tablespoon of sesame oil. Once hot, add the diced carrots and cook for about 2-3 minutes until slightly softened. Then, add the minced garlic and ginger, and stir-fry for an additional 1 minute.

4. Add the Rice and Peas

Add the cooked brown rice and frozen peas to the skillet. Stir well to combine all ingredients. Cook for about 5 minutes, stirring occasionally to ensure the rice is heated through.

5. Incorporate Crab and Seasoning

Gently fold in the crab meat, cooked eggs, and chopped green onions. Pour in the soy sauce, and add salt and black pepper. Stir everything together and cook for an additional 2-3 minutes until heated through.

6. Serve

Remove the skillet from heat. Serve the crab fried brown rice hot, garnished with more green onions if desired.
