Preparation

Preparing the Ribs

1. Marinate the Ribs

In a large bowl, combine soy sauce, brown sugar, fish sauce, minced garlic, lime juice, chili paste, black pepper, and sesame oil. Mix well to create a marinade.

2. Add Ribs to Marinade

Place the baby back ribs into the marinade, ensuring they are fully coated. Cover and refrigerate for at least 4 hours, preferably overnight.

3. Preheat the Grill

Preheat your grill to medium-high heat.

Remove the ribs from the marinade and shake off excess. Grill for about 3-4 hours, turning occasionally, until tender and caramelized.

Making the Fried Rice

5. Heat Oil

In a large skillet or wok, heat the vegetable oil over medium-high heat.

6. Cook Vegetables

Add diced carrots and cook for 2-3 minutes until slightly softened. Then add green peas and sliced green onions, cooking for an additional 2 minutes.

7. Add Rice and Soy Sauce

Add the cooked jasmine rice to the skillet, breaking apart any clumps. Pour in the soy sauce and stir-fry everything for about 5 minutes until heated through.

8. Scramble the Eggs

Push the rice mixture to one side of the skillet and add the beaten eggs to the other side. Scramble the eggs until cooked and then mix into the rice.

Preparing the Kimchee Pineapple

9. Combine Ingredients

In a bowl, combine the diced pineapple and kimchee. Mix well and let sit for 5 minutes to allow flavors to meld.
