Prepare the Marinade
In a large bowl, combine soy sauce, brown sugar, fish sauce, minced garlic, grated ginger, lime juice, chili powder, black pepper, and sesame oil. Mix well until the sugar is dissolved.

Marinate the Ribs
Place the pork ribs in a large zip-lock bag or a shallow dish. Pour the marinade over the ribs, ensuring they are well coated. Seal the bag or cover the dish with plastic wrap. Refrigerate for at least 4 hours or overnight for best results.

Preheat the Grill
Preheat your grill to medium-high heat (about 200-220 °C or 400-450 °F).

Grill the Ribs
Remove the ribs from the marinade and let any excess marinade drip off. Place the ribs on the preheated grill. Cook for about 20-25 minutes, turning occasionally, until the ribs are cooked through and have a nice char.

Prepare the Pickling Solution
In a bowl, mix rice vinegar, sugar, salt, and red chili flakes. Stir well until the sugar and salt are dissolved.

Combine with Cucumber
Add the thinly sliced cucumbers to the pickling solution and toss to coat well.

Marinate
Let the cucumber salad sit for at least 30 minutes at room temperature, or refrigerate for a couple of hours for a stronger flavor.

Add Fresh Cilantro
Before serving, stir in the chopped fresh cilantro for added flavor and garnish.
