    Prepare the Marinade

    In a bowl, combine soy sauce, brown sugar, fish sauce, sesame oil, minced garlic, minced ginger, chili paste, lime juice, and salt. Mix well until the sugar dissolves.

    Marinate the Ribs

    Place the baby back ribs in a large resealable plastic bag or a deep dish. Pour the marinade over the ribs, ensuring they are well coated. Seal the bag or cover the dish and marinate in the refrigerator for at least 4 hours, preferably overnight.

    Preheat the Grill

    Preheat your grill to medium-high heat (about 375°F or 190°C).

    Grill the Ribs

    Remove the ribs from the marinade and let the excess drip off. Place the ribs on the grill, bone side down. Grill for about 5-7 minutes per side, brushing with reserved marinade occasionally, until the ribs are caramelized and cooked through.

    Once cooked, remove the ribs from the grill and let them rest for 5 minutes before slicing. Serve warm.

    In a large bowl, combine the sliced cucumber, red onion, and shredded carrot.

    In a small bowl, whisk together rice vinegar, sugar, and salt until the sugar dissolves.

    Pour the dressing over the cucumber mixture, add sesame seeds and chopped cilantro. Toss well to combine. Let sit for about 10 minutes before serving.
