Preheat the Oven
Preheat your oven to 375°F (190°C).

Clean the Mushrooms
Gently wipe the mushrooms with a damp cloth to remove any dirt. Remove the stems and set them aside.
Filling the Mushrooms

Cook the Pancetta
In a skillet over medium heat, add the diced pancetta and cook until crispy, about 5-7 minutes. Remove from heat and let cool slightly.

Prepare the Filling
In a mixing bowl, combine the cooked pancetta, minced garlic, grated Parmesan, chopped parsley, truffle oil, and season with salt and black pepper to taste. Mix until well combined.

Stuff the Mushrooms
Drizzle the mushroom caps with olive oil and place them on a baking sheet. Use a spoon to fill each cap with the pancetta filling, pressing down gently to pack it in.
Baking

Bake the Stuffed Mushrooms
Place the baking sheet in the preheated oven and bake for 20-25 minutes, or until the mushrooms are tender and the filling is golden brown.

Remove the stuffed mushrooms from the oven and let cool slightly before serving. Enjoy warm!
