Preparing the Pasta

Boil Water
In a large pot, bring 4 liters of water to a boil. Add 1 tablespoon of salt to the boiling water.

Cook Spaghetti
Add 400g of squid ink spaghetti to the boiling water and cook according to package instructions until al dente, usually about 8-10 minutes. Reserve 1 cup of pasta water, then drain the spaghetti.
Cooking the Seafood

Sear Scallops
In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add 250g of sea scallops and sear for about 2-3 minutes on each side until golden brown. Remove from skillet and set aside.

Cook Shrimp and Squid
In the same skillet, add another tablespoon of olive oil. Add 200g of shrimp and 200g of sliced squid. Cook for about 3-4 minutes, stirring frequently, until shrimp are pink and squid is opaque. Remove from skillet and set aside with scallops.
Making the Sauce

Sauté Garlic
In the same skillet, lower the heat to medium and add 1 tablespoon of olive oil. Add 3 minced garlic cloves and sauté for about 1 minute until fragrant.

Add Tomatoes and Spices
Stir in 400g of crushed canned cherry tomatoes and 1 teaspoon of crushed red pepper flakes. Let simmer for about 5-7 minutes until the sauce thickens slightly.

Combine Everything
Add the cooked squid ink spaghetti to the sauce, along with the reserved pasta water as needed. Toss in the cooked seafood (scallops, shrimp, and squid) and 1 tablespoon of chopped fresh mint. Stir well to combine.

Plate the Dish
Serve the squid ink spaghetti fra diavolo immediately, garnished with grated ricotta salata on top and additional mint, if desired.
