Tartare Preparation

    Prepare the Salmon

    Dice the fresh salmon fillet into small, bite-sized cubes and place them in a mixing bowl.

    Mix the Ingredients

    Add the diced avocado, finely chopped red onion, chopped cilantro, lime juice, Sriracha sauce, soy sauce, salt, and black pepper to the bowl with the salmon.

    Combine

    Gently mix all the ingredients together until well combined. Be careful not to mash the avocado.

    Chill

    Cover the bowl with plastic wrap and refrigerate the tartare for about 15 minutes to let the flavors meld.

Plantain Chips Preparation

    Slice the Plantains

    Peel the green plantains and slice them into thin rounds, about 1/8 inch thick.

    Heat the Oil

    In a large, deep skillet or pot, heat the vegetable oil over medium-high heat until hot.

    Fry the Chips

    Carefully add the sliced plantains to the hot oil in batches, frying them for 2-3 minutes or until they are golden and crispy.

    Drain and Season

    Remove the chips from the oil using a slotted spoon and drain them on paper towels. Sprinkle with salt while they are still hot.

    Allow the chips to cool completely before serving.
