Preparation of Snapper

    Begin by finely dicing the fresh snapper into small cubes. Ensure that the fish is very fresh and has been properly cleaned.

Yuzu Dressing

    In a small bowl, whisk together the yuzu juice, soy sauce, sesame oil, and honey until well combined. Set aside.

Mixing the Tartare

    In a mixing bowl, combine the diced snapper with the yuzu dressing. Mix gently to coat all the fish pieces with the dressing.

    Chop the chives finely and fold them into the snapper mixture for added flavor and color.

    Taste and adjust seasoning if necessary, adding more soy sauce or yuzu juice to preference.

Preparing Wontons
