Skirt Steak

    Prepare the Steak

    Rub the skirt steak with olive oil, garlic powder, salt, and black pepper. Let it sit at room temperature for at least 30 minutes to marinate.

    Grill the Steak

    Preheat a grill or grill pan over medium-high heat. Grill the steak for about 3-4 minutes on each side for medium-rare, or until it reaches your desired doneness. Remove from heat and let rest for 5 minutes before slicing.

Yuca Fries

    Prepare the Yuca

    Peel the yuca and cut it into thick fries (about 1/2 inch).

    Boil the Yuca

    Place the yuca fries in a pot of salted boiling water and cook for about 15-20 minutes, or until fork-tender. Drain and let cool.

    Fry the Yuca

    In a deep pan, heat vegetable oil over medium-high heat. Fry the yuca fries in batches until golden brown and crispy, about 5-7 minutes. Remove and drain on paper towels, then season with salt.

Grilled Vegetables

    Chop the bell peppers, zucchini, and red onion into bite-sized pieces.

    In a bowl, toss the chopped vegetables with olive oil, salt, and pepper. Grill the vegetables in a grill basket or on skewers for about 8-10 minutes or until tender and slightly charred, stirring occasionally.

Salsa Verde

    Make the Salsa Verde

    In a food processor, combine the cilantro, garlic, lime juice, olive oil, and salt. Blend until smooth. Adjust seasoning to taste if necessary.
