Clean the Oysters
Rinse the fresh oysters under cold water to remove any sand or debris. Use a brush if necessary. Place them on a clean towel to dry.

Make the Sofrito Butter
In a medium saucepan, heat the olive oil over medium heat. Add the diced onion, red pepper, and minced garlic. Sauté until softened, about 5-7 minutes. Stir in the cilantro, salt, and black pepper, and cook for an additional 1-2 minutes. Remove from heat and mix in the unsalted butter until melted and well combined.

Cook the Chorizo
In a small skillet, cook the diced chorizo over medium heat until browned and crispy, about 5-7 minutes. Remove from heat and set aside.
Assembly and Roasting

Prep the Oysters for Roasting
Preheat your oven to 425°F (220°C). Place the cleaned oysters on a baking sheet, cup side up.

Add Sofrito Butter
Spoon a generous amount of the sofrito butter over each oyster, ensuring they are well coated.

Top with Chorizo and Cheese
Sprinkle the cooked chorizo evenly over the oysters. Then, add the grated manchego cheese on top of each one. Finally, sprinkle paprika over the entire baking sheet.

Roast the Oysters
Place the baking sheet in the preheated oven and roast for about 10-12 minutes, or until the cheese is bubbly and golden brown.

Remove the baking sheet from the oven and let the oysters cool for a minute. Serve hot, garnished with additional cilantro if desired.
