Method

Steak Preparation

  1. 1

    Prepare the Rub

In a small bowl, combine the dried porcini mushrooms, ground coffee, smoked paprika, garlic powder, onion powder, salt, and black pepper. Mix well.

  2. 2

    Rub the Steak

Pat the Wagyu strip steak dry with paper towels. Generously apply the porcini-coffee rub on all sides of the steak. Let it sit at room temperature for 30 minutes before cooking.

Cooking the Steak

  1. 3

    Sear the Steak

Heat a cast-iron skillet over high heat until very hot. Add a little olive oil to the pan and place the steak in the skillet. Cook for about 4-5 minutes on each side for medium-rare, or until the desired doneness is reached.

  2. 4

    Add Truffle Butter

In the last minute of cooking, add a spoonful of black truffle butter on top of the steak and let it melt while the steak finishes cooking.

Mashed Creamer Potatoes

  1. 5

    Boil the Potatoes

In a large pot, add the creamer potatoes and cover them with water. Bring to a boil and cook for about 15-20 minutes, or until tender.

  2. 6

    Mash the Potatoes

Drain the potatoes and return them to the pot. Add the butter, heavy cream, salt, and black pepper. Mash until smooth and creamy.

Spinach Preparation

  1. 7

    Sauté the Spinach

In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant. Add fresh spinach and cook until wilted, about 3-4 minutes. Season with a pinch of salt.

Serving

  1. 8

    Plate the Dish

On a plate, serve the sliced Wagyu steak topped with melted black truffle butter, alongside a generous serving of mashed creamer potatoes and sautéed spinach.
