Method
Preparing the Caviar

Prepare the Caviar
Carefully remove the Osetra caviar from the refrigerator and let it come to room temperature for about 15 minutes before serving. This enhances its flavor.
Making the Blinis

Activate Yeast
In a small bowl, dissolve the yeast and sugar in warm milk (about 110°F or 43°C) and let it sit for about 5-10 minutes until frothy.

Mix Ingredients
In a large mixing bowl, combine all-purpose flour and salt. Create a well in the center and add the activated yeast mixture and the egg.

Let Rise
Stir the mixture until smooth, then cover with a clean cloth and let it rise in a warm place for about 30 minutes.

Cook Blinis
Heat a non-stick skillet over medium heat and melt 1 tablespoon of butter. Pour in small amounts of batter to form small pancakes (about 2-3 inches in diameter).

Finish Cooking
Cook until bubbles appear on the surface, then flip and cook for another 1-2 minutes until golden brown. Repeat with remaining batter, adding more butter as needed.

Keep Warm
Transfer the blinis to a plate and keep them warm while you prepare the sour cream and chives.
Serving

Plate and Serve
To serve, spread a teaspoon of sour cream on each blini, top with a generous spoonful of Osetra caviar, and sprinkle with chopped chives.
