Method

Rub Preparation

  1. 1

    Prepare the Porcini-Coffee Rub

In a food processor, combine the dried porcini mushrooms, coffee grounds, brown sugar, smoked paprika, garlic powder, salt, and black pepper. Pulse until finely ground.

Steak Cooking

  1. 2

    Season the Steak

Pat the Wagyu NY Strip Steak dry with paper towels. Rub the porcini-coffee mixture generously over the steak on all sides.

  2. 3

    Cook the Steak

Heat olive oil in a skillet over medium-high heat. Once hot, add the steak and cook for about 4-5 minutes on each side for medium-rare, or until desired doneness is achieved.

  3. 4

    Rest the Steak

Remove the steak from the skillet and let it rest for 5-10 minutes before slicing.

Black Truffle Butter Preparation

  1. 5

    Make the Truffle Butter

In a small bowl, mix the softened unsalted butter with black truffle oil, chopped parsley, and salt to taste until well combined. Set aside.

Creamer Potatoes Preparation

  1. 6

    Cook the Potatoes

In a pot of boiling salted water, add the halved creamer potatoes and cook until tender, about 15-20 minutes. Drain and return to the pot.

  2. 7

    Mash the Potatoes

Add butter, heavy cream, salt, and black pepper to the potatoes. Mash until creamy and smooth.

Spinach Preparation

  1. 8

    Sauté the Spinach

In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 30 seconds until fragrant. Add fresh spinach and cook until wilted, about 2-3 minutes. Season with salt to taste.
