    Peel and Cut Potatoes

    Peel the russet potatoes and cut them into evenly sized chunks, about 1-2 inches.

    Boil Potatoes

    Place the cut potatoes into a large pot and cover them with cold water. Add 1 tsp of salt. Bring to a boil over high heat, then reduce to medium heat and simmer for about 15-20 minutes, or until the potatoes are fork-tender.

Mashing

    Drain and Return to Pot

    Once the potatoes are tender, drain them in a colander and return them to the pot over low heat to evaporate any remaining moisture for about 1-2 minutes.

    Add Ingredients

    Remove the pot from heat and add the butter and heavy cream. If using, add minced garlic and cream cheese at this stage. Allow the butter to melt slightly before mashing.

    Mash Potatoes

    Using a potato masher, mash the potatoes until they reach your desired consistency. For a creamier texture, you can use a hand mixer or stand mixer on low speed.

    Season

    Add salt and black pepper to taste, mixing well after each addition. If desired, fold in chopped chives for added flavor.

    Transfer the mashed potatoes to a serving bowl. Optionally, top with extra butter and chives before serving.
