Pasta Preparation

    Cook the Lumache Pasta

    Bring a large pot of salted water to a boil. Add the lumache pasta and cook according to package instructions until al dente, usually about 8-10 minutes. Drain and set aside.

Cheese Sauce Preparation

    Make the Roux

    In a large saucepan over medium heat, melt the butter. Once melted, add the all-purpose flour and whisk continuously for about 2 minutes until the mixture is smooth and bubbly, but not browned.

    Add Milk

    Gradually whisk in the milk, ensuring there are no lumps. Continue to stir until the mixture thickens and comes to a simmer, about 5-7 minutes.

    Incorporate Cheeses

    Reduce heat to low, and stir in the gruyere, cheddar, gouda, pepper jack, and parmesan cheese. Mix until the cheese has completely melted and the sauce is creamy. Season with salt, black pepper, and paprika.

Combine and Bake

    Mix Pasta and Cheese Sauce

    Add the drained lumache pasta to the cheese sauce, stirring gently until the pasta is evenly coated.

    Optional Topping

    If using, preheat your oven to 350°F (175°C). Transfer the mac and cheese mixture to a greased baking dish. In a small bowl, combine breadcrumbs and extra parmesan cheese, and sprinkle evenly over the top.

    Bake in the preheated oven for 20-25 minutes, or until the top is golden and bubbly.
