    Prepare the Lobster

    Bring a large pot of salted water to a boil. Add the lobster tails and boil for 5-7 minutes until they turn bright red. Remove and let cool. Once cooled, remove the meat from the shells and chop into bite-sized pieces. Set aside.

    Sauté the Vegetables

    In a large pot, melt the butter over medium heat. Add the chopped onion, carrot, and celery. Sauté for about 5-7 minutes until the vegetables are soft and translucent. Add minced garlic and sauté for an additional 1-2 minutes until fragrant.

    Add Tomato Paste

    Stir in the tomato paste and cook for 2-3 minutes, allowing it to caramelize slightly.

    Add Stock and Seasoning

    Pour in the fish stock, add salt and black pepper, and bring the mixture to a simmer. Let it cook for about 15-20 minutes to blend the flavors.

    Blend the Soup

    Using an immersion blender or a regular blender, blend the soup until smooth. If using a regular blender, be careful with hot liquids.

    Finish with Cream and Cognac

    Return the blended soup to the pot, stir in the heavy cream and cognac or brandy. Simmer on low heat for another 5 minutes.
