Prepare the Chicken

Preheat the Oven
Preheat your oven to 425°F (220°C).

Prepare the Chicken
Rinse the whole chicken under cold water and pat it dry with paper towels.

Season the Chicken
In a small bowl, mix together the olive oil, paprika, cumin, garlic powder, salt, black pepper, and lemon juice. Rub this mixture all over the chicken, making sure to get it under the skin and inside the cavity for maximum flavor.

Roast the Chicken
Place the chicken on a roasting pan or baking sheet, breast side up. Roast in the preheated oven for about 1 hour, or until the internal temperature reaches 165°F (75°C) and the skin is crispy and golden brown.
Make the Creamy Green Sauce

Blend the Sauce Ingredients
In a blender or food processor, combine the fresh cilantro, sour cream, mayonnaise, minced garlic, chopped jalapeño, lime juice, and salt. Blend until smooth and creamy.

Taste the sauce and adjust seasoning if necessary, adding more salt or lime juice to taste.
Serve the Dish

Once the chicken is done roasting, remove it from the oven and let it rest for 10 minutes. Carve the chicken into serving pieces and serve with the creamy green sauce on the side.
