Grouper Preparation

Season the Grouper
Preheat your oven to 375°F (190°C). Season the grouper fillets with salt and black pepper on both sides.

Sear the Grouper
In a large oven-safe skillet, heat olive oil over medium-high heat. Add the grouper fillets and sear for 3-4 minutes on each side until golden brown. Remove from heat.

Combine Ingredients
In a bowl, mix the chopped mushroom mixture with bread crumbs, grated Parmesan cheese, and melted butter until well combined.

Apply the Mushroom Crust
Spread the mushroom crust evenly over the seared grouper fillets. Press it down gently.

Prepare the Jus
In a saucepan, combine sliced mushrooms, vegetable broth, and red wine. Bring to a simmer and cook for about 15-20 minutes until reduced and slightly thickened.

Add fresh thyme, salt, and black pepper to the jus. Stir well and remove from heat.

Place the skillet with the crusted grouper in the preheated oven and bake for 15-20 minutes, until the fish is cooked through and flakes easily.

On serving plates, spoon a generous portion of mashed potatoes, place a grouper fillet on top, add sautéed cipollini onions, and drizzle with mushroom jus.
