Preparing the Grilled Orata

    Clean and Prepare the Fish

    Clean the orata by removing the scales and innards. Rinse under cold water and pat dry with paper towels.

    Marinate the Fish

    In a bowl, mix olive oil, minced garlic, chopped parsley, the juice of half the lemon, salt, and black pepper. Rub this mixture all over the fish, including the cavity. Allow it to marinate for at least 30 minutes.

    Preheat the Grill

    Preheat your grill to medium-high heat.

    Grill the Fish

    Place the marinated fish on the grill and cook for about 6-7 minutes on each side, or until the fish is cooked through and has nice grill marks.

Preparing the Gigandes Bean Salad

    Cook the Beans

    Soak the gigandes beans overnight. Drain and cook them in boiling water for about 1 hour or until tender. Drain and set aside.

    Chop the Vegetables

    Dice the cherry tomatoes, finely chop the red onion, and chop the cucumber into bite-sized pieces.

    Combine Salad Ingredients

    In a large bowl, combine the cooked gigandes beans, chopped tomatoes, onion, cucumber, crumbled feta cheese, and chopped dill.

    Dress the Salad

    In a small bowl, whisk together olive oil, red wine vinegar, salt, and black pepper. Pour over the salad and toss gently to combine.

Making the Lemon Butter

    Melt the Butter

    In a small saucepan over low heat, melt the unsalted butter until fully melted.

    Add Lemon Flavor

    Stir in the lemon juice, lemon zest, salt, and black pepper. Mix well and remove from heat.
