Make the Gnocchi Dough
Pass the peeled potatoes through a potato ricer into a large bowl. Add the flour, egg, and salt. Mix gently until a dough forms. Avoid overworking the dough.

Shape the Gnocchi
Divide the dough into four pieces. Roll each piece into a rope about 1/2 inch thick. Cut into 1-inch pieces and press each piece lightly with a fork to create ridges.

Cook the Gnocchi
Bring a large pot of salted water to a boil. Drop in the gnocchi and cook until they float to the surface, about 2-3 minutes. Remove with a slotted spoon and set aside.
Blue Crab Sauce Preparation

Sauté Aromatics
In a large skillet, heat olive oil over medium heat. Add minced shallots and garlic, cooking until soft and fragrant, about 3-4 minutes.

Add Cream and Cheese
Pour in the heavy cream and bring to a gentle simmer. Stir in grated Parmesan cheese until melted and smooth.

Incorporate Crab
Gently fold in the blue crab meat, salt, and black pepper. Heat through for about 2-3 minutes. Adjust seasoning to taste.

Finish with Truffle and Parsley
Just before serving, add shaved black summer truffle and chopped parsley to the sauce, stirring gently to combine.
Assembly

Combine Gnocchi and Sauce
In a large bowl, toss the cooked gnocchi with the blue crab sauce until well coated.

Plate the gnocchi and garnish with additional parmesan, parsley, and a few extra shavings of black summer truffle, if desired.
