Prepare the Seafood
Clean and debeard the mussels and clams. Rinse the shrimp, squid, and grouper fillet under cold water. Cut the octopus into bite-sized pieces and slice the squid into rings.

Chop the Vegetables
Finely chop the onion, bell pepper, and celery. Mince the garlic and chop the fresh parsley, setting aside some for garnish.

Add the Tomatoes and Liquid
Stir in the tomatoes and cook for another 5 minutes. Pour in the white wine and let it simmer for 2-3 minutes to evaporate the alcohol.

Add the Seafood
Add the fish stock or seafood broth to the pot. Bring to a boil, then add the shrimp, clams, mussels, octopus, squid, and grouper. Season with salt, black pepper, and red pepper flakes to taste.

Simmer
Reduce the heat to low and cover the pot. Let the stew simmer for about 15-20 minutes, or until the seafood is cooked through and the clams and mussels have opened.

Garnish and Serve
Before serving, taste and adjust seasoning if necessary. Garnish with fresh parsley and serve hot in bowls with crusty bread on the side.
