Prepare Tomatoes
Dice the tomatoes into small cubes and place them in a bowl.

Season the Mixture
Pour the lime juice over the mixture and sprinkle with salt. If you like heat, finely chop the jalapeño and add it in.

Mix and Marinate
Gently toss all the ingredients together and let it sit for at least 15 minutes to allow the flavors to meld.
Spicy Aioli

Combine Ingredients
In a small bowl, combine the mayonnaise, sriracha, minced garlic, lemon juice, and salt.

Mix Well
Stir the mixture until all ingredients are well incorporated and smooth.

Taste and Adjust
Taste the aioli and adjust seasoning or spice level as desired.
Fish and Assembly

Prepare Fish
Pat the fish fillets dry with paper towels. Season both sides with salt and pepper.

Cook Fish
Heat olive oil in a non-stick skillet over medium heat. Add the fish fillets and cook for about 3-4 minutes per side or until cooked through and flaky.

Toast Brioche Buns
While the fish is cooking, slice the brioche buns in half and toast them lightly in a separate pan or toaster.

Assemble Sandwich
Spread a generous amount of spicy aioli on the bottom half of each toasted brioche bun. Place a cooked fish fillet on top, followed by a spoonful of tomato ceviche. Top with the other half of the bun.
