Prepare Dates
Using a sharp knife, make a lengthwise slit in each Medjool date and remove the pit. Be careful not to cut all the way through the date.

Stuff Dates
Take a small piece of blue cheese (about 5 grams) and stuff it into each date, pressing gently to close the slit.

Wrap Dates in Bacon
Cut each bacon slice in half. Wrap each stuffed date with a half slice of bacon, securing it in place with a toothpick if necessary.
Cooking

Preheat Oven
Preheat your oven to 375°F (190°C).

Arrange Dates
Place the bacon-wrapped dates on a baking sheet lined with parchment paper, ensuring they are spaced apart.

Bake in the preheated oven for 15-20 minutes, or until the bacon is crispy and the dates are heated through.
Serving

Remove the dates from the oven and let them cool slightly. If using, drizzle with honey and sprinkle with chopped fresh parsley before serving.
