Method

Prepare Sofrito Butter

    Melt Butter

    In a medium saucepan, melt the unsalted butter over medium-low heat.

    Cook Aromatics

    Add the olive oil, finely chopped onion, and minced garlic to the melted butter. Sauté for about 3-4 minutes until the onion is translucent.

    Add Peppers and Seasoning

    Stir in the chopped red bell pepper, chopped parsley, smoked paprika, salt, and black pepper. Cook for an additional 5 minutes, stirring occasionally. Remove from heat and set aside.

Prepare Chorizo

    Cook Chorizo

    In a skillet over medium heat, add the chorizo sausage. Cook for about 5-7 minutes, breaking it up with a wooden spoon until it is browned and cooked through. Remove from heat.

Assemble Oysters

    Preheat Oven

    Preheat your oven to 375°F (190°C).

    Prepare Oysters

    On a baking sheet, place the shucked oysters in their shells. Spoon a generous amount of sofrito butter onto each oyster.

    Top with Chorizo and Cheese

    Add a spoonful of cooked chorizo on top of the buttered oysters, then sprinkle a generous amount of grated Manchego cheese over each.

    Bake

    Bake the oysters in the preheated oven for about 10-12 minutes, or until the cheese is melted and bubbly.

    Serve

    Remove from oven and serve immediately with fresh lemon wedges on the side.
